The modern bar scene never stops finding creative new ways to deliver flavour. One technique in particular has evolved in recent years from a well kept secret of high end mixology into a genuine trend: fat washing. It may sound unusual at first, but it opens up entirely new flavour possibilities. A cocktail made with olive oil combines the art of refined drinking with the kind of precision more often associated with fine dining.
Fat washing is based on a simple but highly effective way of transferring flavour. A spirit is combined with a liquid fat, such as a high quality olive oil. The fat transfers its distinctive aromas and a unique texture to the alcohol without leaving the finished drink tasting greasy or oily.
The secret lies in the freezing process that follows. Because alcohol has a much lower freezing point than fat, the olive oil solidifies completely in the freezer while the spirit remains liquid. The solidified fat can then simply be removed and filtered out.
What remains is an enhanced spirit with a silky texture and deep, complex flavour.
When making a cocktail with olive oil, the quality of the ingredients makes all the difference. Because Venta del Barón Extra Virgin Olive Oil is completely natural and unfiltered, it brings the full character of Andalusia straight into the glass.
Its origin in the unique terroir of the Sierra de la Subbética, at an altitude of 1,000 metres, gives this exclusive blend of Hojiblanca and Picuda olives its distinctive personality.
Delicate notes of green tomato, banana and almond pair beautifully with clear spirits. Thanks to the careful production process, including cold extraction at below 22°C within 15 hours of harvest, the oil retains its valuable polyphenols and vibrant flavour compounds.
These aromas create the foundation for turning a simple drink into something far more memorable.
You do not need professional bar equipment to try fat washing for yourself. With a little patience, it is easy to do in your own kitchen.
Mix: Add around 60 ml of Venta del Barón olive oil to 500 ml of your chosen spirit in a sealable glass container. Gin, vodka and white rum all work particularly well.
Infuse: Shake the container well and leave it at room temperature for around 4 to 12 hours. Give it another shake from time to time to help the flavours combine.
Freeze: Place the container in the freezer for at least 24 hours. The olive oil will solidify on the surface and form a firm layer.
Filter: Carefully make a small hole in the solidified fat layer and pour the liquid spirit through a fine sieve or coffee filter into a clean bottle.
The result is a clear spirit with a beautifully soft mouthfeel and an unmistakable hint of Andalusia.
The classic Martini is the perfect showcase for this technique. Its clean, elegant profile gives the olive oil aromas plenty of room to shine.
6 cl fat washed gin, infused with Venta del Barón
1.5 cl dry vermouth
1 green olive or a twist of lemon zest to garnish
Stir the ingredients with plenty of ice in a mixing glass until well chilled, then strain into a chilled Martini glass.
The characteristic bitterness and botanical notes of the gin pair beautifully with the fruity freshness and subtle peppery finish of our award winning olive oil.
No. Because the olive oil is fully solidified during freezing and carefully filtered out, no visible fat droplets remain in the finished drink.
What does change is the texture. The alcohol feels noticeably softer, rounder and more elegant on the palate.
Clear spirits such as gin and vodka are ideal because they allow the delicate fruity and herbal notes of Hojiblanca and Picuda olives to come through clearly.
A mild bourbon can also work very well, especially alongside the more nutty notes of the olive oil.
Once filtered, the spirit should be stored in the refrigerator.
Because olive oil is a natural product, we recommend enjoying the infused spirit within two to three weeks for the freshest possible flavour.
