Our Spanish olives are harvested just before they reach full ripeness, as soon as their color begins to change slightly—the perfect moment for a fresh, aromatic oil. Harvesting is carried out using a special technique used exclusively for olives for oil production. The olives then undergo a careful selection process:
Loose leaves are removed, the olives are washed, and checked for the highest quality . The different olive varieties are blended under cold conditions, which shortens extraction time and preserves the precious flavors.


Only the highest-quality batches are selected for their distinctive flavor, according to the strict regulations of the Priego de Córdoba Designation of Origin. The olives are milled within less than 15 hours of harvest to fully preserve their aromas.
