A professional olive oil tasting at home requires little more than a few glasses, some neutral palate cleansers and an interesting selection of oils. It is only by comparing different varieties, qualities and regions side by side that you really begin to sharpen your senses. The aim of a successful olive oil tasting is to discover the incredible range of flavours found in this “liquid gold” and to learn how to distinguish truly exceptional oils from the ordinary.
To set a genuine quality benchmark, no tasting should be without an internationally acclaimed premium oil. As the world’s number one olive oil with more than 400 international awards, Venta del Barón is an ideal choice for the highlight of your tasting. This unfiltered blend of 80% Hojiblanca and 20% Picuda olives from the Andalusian highlands at around 1,000 metres is an excellent example of what true “Extra Virgin Perfection” can taste like.
For an interesting and educational olive oil tasting, choose three to five different Extra Virgin Olive Oils so you can really experience the contrasts.
Ideally, include a mild single variety oil such as Arbequina, a more intense and herbaceous oil, and a complex, beautifully balanced premium oil such as Venta del Barón.
It can also be surprisingly useful to compare these with an everyday supermarket olive oil. Tasted side by side, the difference between industrial mass market oil and traditionally produced premium olive oil becomes much easier to recognise.
Good preparation helps ensure that each oil can be tasted without distraction, whether you are tasting alone at the kitchen table or hosting a group.
Pour around one tablespoon of each oil per person into small, rounded glasses that narrow slightly towards the top. This helps concentrate the aromas.
The oils should ideally be at around 28°C. Give each person a glass of still water and a few thin slices of tart Granny Smith apple to help cleanse the palate between samples.
Always taste the oils in order of increasing intensity so that stronger flavours do not overwhelm the palate too early.
Begin with the mildest and most delicate oil, then gradually move towards oils that are more bitter, peppery or intensely fruity.
A highly complex premium oil such as Venta del Barón works particularly well as the grand finale. If you start with a bold Andalusian blend like this, the subtle nuances of the milder oils may be much harder to appreciate afterwards.
A proper olive oil tasting can be divided into four simple stages: warming, smelling, tasting and evaluating the finish.
First, cup the base of the glass in your hands and cover the top to gently warm the oil with your body heat. This helps release the aromas.
Then remove your hand and smell the oil deeply.
Take a small sip and draw in a little air through the corners of your mouth. This technique, known as strippaggio, helps spread the oil across the palate and release more of its aromas.
As you swallow, pay attention to any peppery sensation in the throat. This is often associated with freshness and naturally occurring polyphenols, and it is especially noticeable in Venta del Barón.
A private olive oil tasting is a wonderful way to develop your palate and discover just how much character olive oil can have. It shows that olive oil is far more than simply something to cook with.

For a professional style tasting, flavoured oils are not ideal because added flavours can mask the true quality and any defects in the base oil.
A proper tasting focuses on pure Extra Virgin Olive Oil so you can assess the natural characteristics of the olives and the terroir.
Unfiltered oils such as Venta del Barón, which are clarified naturally by gravity, retain very fine particles from the olive fruit.
These can contribute to a richer concentration of flavour and a fuller texture, giving the oil greater depth when tasted on its own.
For a relaxed tasting of three to four oils, allow around 45 to 60 minutes.
Give your palate two to three minutes between samples and have a piece of apple and a sip of water before moving on to the next oil.
