Our olive groves are located in the heart of Andalusia, characterized by rugged limestone mountains and a unique microclimate. The year 2026 provided us with ideal conditions: cold winters and a hot summer with clear temperature differences between day and night.
This interplay ensures that the olives could develop a particularly high density of aromas and valuable polyphenols. Each bottle of the new harvest is a direct expression of this terroir – a "heirloom" of quality and tradition.
Quality at Venta del Barón is not a coincidence, but the result of a strict, almost ritualistic process. For the 2026 harvest, we have further refined our proven methods:
We combine 80% Hojiblanca and 20% Picuda olives. The harvest takes place exactly at the moment when the fruits change color – just before full ripeness. Only then do we achieve the intense, green-fruity aroma that distinguishes Venta del Barón.
Time is the enemy of aroma. Therefore, our olives are milled within less than 15 hours after harvesting. In our mill, the Almazara de Muela, we use an exclusive system that extracts the oil without adding heat or water. This way, all vitamins and antioxidants are completely preserved.
After pressing, we allow the oil to rest. It is not filtered, but clarifies naturally for 15 days by gravity in stainless steel tanks. This natural decantation gives our liquid gold its incomparable purity and texture.
Did you know? To produce just one liter of Venta del Barón, we need between 5 and 10 kilograms of olives. A single tree therefore yields just enough fruit for about 5 to 10 liters of this exclusive oil per year.
The 2026 vintage impresses with a balanced and complex structure. Expect notes of freshly cut grass and herbs on the nose, while on the palate, a harmonious balance between mild sweetness and a characteristic, slightly peppery note on the finish dominates.
